A mixture of sausage, peppers, onions and garlic, with a cornbread crust. Great anytime.
Ingredients
  • 1 pkg Georgia Best Brand smoked sausage, diagonally cut into bite size pieces
  • 3 cloves minced garlic
  • 1 onion, medium, diced
  • 1 green bell pepper, diced
  • 2 tbs chili powder
  • 1 tsp cumin
  • ½ tsp salt
  • 1 can diced tomatoes, save juice
  • 1 can black beans, drained
  • 1 cup Monterey Jack cheese, shredded
  • 1 jalapeno, minced
  • 1 box corn muffin mix, see package for prep directions
Instructions
  1. Preheat oven to 400" F
  2. Heat a 10" oven-safe skillet over medium-high heat and add smoked sausage, cook until browned. Add garlic, onion and bell pepper and cook until vegetables are soft, about 6 minutes.
  3. Stir in chili powder, cumin, salt, tomatoes with their juice and beans. Cook for 3 - 5 minutes, until mixture starts to bubble. Turn off heat and stir in cheese.
  4. Mix jalapeno into the prepared corn muffin mix. Spread corn muffin batter over the mixture and bake until golden brown and cooked through, 20 -25 minutes.
Curtis Mac & Cheese for Breakfast

A great breakfast casserole.
Ingredients
  • 1 pound of pasta (macaroni is suggested but any small shaped pasta will work)
  • 1 pound Georgia Best Brand fresh sausage, removed from casings and crumbled
  • 1 large onion, diced
  • 1 red pepper, diced
  • 1 jalapeño pepper, discard seeds and dice
  • 1 teaspoon garlic salt
  • 4 tablespoons butter
  • 6 tablespoons flour
  • 4 cups whole milk
  • 2 cups shredded Colby jack cheese
  • 2 cups pepper jack cheese
  • 2 cups sharp cheddar cheese
  • salt and pepper to taste
  • 4 eggs
  • 5 or 6 toasted breakfast biscuits, crumbled (homemade or the from the refrigerated aisle at Curtis Foods)
Instructions
  1. Preheat oven to 375 degrees and bring a large pot of salted water to a boil. Cook pasta to al dente and drain.
  2. In a large pan, cook sausage, crumbling it with a wooden spoon as it cooks. Once no longer pink, remove it to a bowl with a slotted spoon and set aside.
  3. Add onion, red pepper, and jalapeno to grease in pan and cook until softened, about 4 to 5 minutes.
  4. Spoon onion mixture into bowl with sausage.
  5. Add the butter to the pan and melt over medium heat. Whisk in flour and cook for 2 minutes, stirring constantly. Gradually whisk in milk. Bring to a boil and simmer for 2 to 3 minutes, until thickened. Turn heat off and add ⅔ of the cheese. Stir until melted. Season to taste with salt and pepper.
  6. Add pasta, and reserved sausage/onion mixture. Stir until evenly mixed. Pour into a buttered casserole dish or cast iron pan.
  7. In a medium bowl, whisk the eggs together and then stir in the remaining cheese plus the crumbled biscuits. Pour this mixture on top of the mac and cheese.
  8. Place in oven for 25 to 30 minutes.

Great for breakfast over hot biscuits or for any relaxed meal. Real comfort food.
Ingredients
  • 1 pound ground pork sausage
  • 2 tablespoons margarine
  • ¼ cup all-purpose flour
  • 4cups milk
  • saIt and pepper to taste
Instructions
  1. In a large skillet over medium high heat, saute the sausage for 10 minutes, or until browned. Stir in the margarine until well blended, then stir in the flour until mixture is thick and pasty.
  2. Reduce heat to medium low and slowly add the milk, stirring constantly, until mixture is thick and bubbly and to desired consistency. Season with salt and pepper to taste.

Great recipe for a meal alone, or add a side such as roasted potatoes.
Ingredients
  • 6 (4 ounce) links Georgia Best Brand sausage
  • 2 tablespoons butter
  • 1 yellow onion, sliced
  • ½ red onion, sliced
  • 4 cloves garlic, minced
  • I large red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • ¼ cup white wine
Instructions
  1. Place the sausage in a large skillet over medium heat, and brown on all sides. Remove from skillet, and slice diagonally into bite-size pieces.
  2. Melt butter in the skillet. Stir in the yellow onion, red onion, and garlic, and cook 2 to 3 minutes. Mix in red bell pepper and green bell pepper. Season with basil, and oregano. Stir in white wine. Continue to cook and stir until peppers and onions are tender.
  3. Return sausage slices to skillet with the vegetables. Reduce heat to low, cover, and simmer 15 minutes, or until sausage is heated through.
